For you carb watchers out there, this recipe is a treat! Now, don't start groaning, these really are yummy (even my kids like them). We prefer these pancakes over the normal ones now. So here goes:
Protein Pancakes
4 eggs
1 cup cottage cheese
1/2 cup slow cooking oats
1 tsp vanilla
1 tsp cinnamon
2 packets stevia (or other sweetener)
Put all ingredients in blender and mix until smooth. Cook just like regular pancakes. I've found if you lower the temperature and cover they turn out better.
We like to top with "I Can't Believe it's Not Butter" Spray, sugar-free syrup (regular butter and syrup for the kids) and cut up strawberries. My mouth is watering just writing this! Let me know what you think.

Doesn't quite sound as good as a white...fluffy...carby one drenched with sticky....thick...Mrs. Butterworth syrup! But that is the difference between your butt and mine! I will have to give them a try, they due sound MUCH healthier :)

What are slow cooking oats? (The whole oat flakes that haven't been chopped up into smaller pieces?) If so, what does it matter since you are going to put it all through the blender any way? I drive myself crazy -- ignore me! But is that the type of oat the recipe calls for? I do want to try this, been ages since I've had a pancake!!!
Wow...that sounds interesting. I might have to try that. Do you have to oil up the pan? If so, how do you do it?
To me, slow cooking oats are the regular old fashioned kind. I think the recipe calls for these because of nutritional value?? I don't think it makes a difference what you use though. And yes, I spray the pan with Pam first...
